In 2021, a significant share in federal retail chains is occupied by beef obtained from beef cattle breeds. In such chains as Metro, Auchan, there is more than 70% of such beef in the assortment (if we consider the number of presented items, and not by the volume of sales). In such chains as Miratorg and Agrocomplex, almost all the beef presented in the sale is obtained from beef cattle. This is due to the fact that both beef chains represent the products of their own agricultural holdings, which are producers of beef obtained from beef cattle breeds.

Average retail prices for beef steaks in Moscow, as of September 10, according to AB-Center, amounted to RUB 1,927 / kg. The lowest prices were 570 RUB / kg, the highest - 8 658 RUB / kg.  In St. Petersburg, the average prices for beef steaks were 1,752 RUB / kg, in Rostov-on-Don - 1,650 RUB / kg, in Krasnodar - 1,382 RUB / kg, in Nizhny Novgorod - 1,845 RUB / kg, in Yekaterinburg - 1,737 RUB / kg, in Novosibirsk - 1,825 RUB / kg, in Vladivostok - 1,726 RUB / kg.

The difference in the level of average prices in the cities of Russia is influenced not only by the difference in prices for the same items, but also by the difference in the assortment presented. For example, Moscow has the highest average prices, but here the number of more expensive steaks presented in the sale is significantly higher than in other cities of the country.

As of the monitoring date, the following items were included in the sample: Top Blade steak, Rump steak, Denver steak, Chuck Roll steak, Bavet steak, Picanya steak,  Rib-eye steak, Parisienne steak, Striploin steak, Tri-type steak , Machete steak, Buffalo steak, Mignon steak and others.
