Dessert is not with a twist, but with a northern flavor. In Norilsk, they began to produce unusual ice cream - the authors of the gastronomic delight supplemented the traditional ice cream on a stick with venison, and unexpectedly! the delicacy was to your liking. Interest in it was shown by local retail chains, there were requests from other regions and even from abroad.
The morning of the arctic barista Sergey, like all coffee lovers, begins with himself. Although - to be more precise - after all, from rubbing dried meat. Because of him, he calls his author's drink food. It all started 2 years ago, when a dish from local products was required to participate in the gastrofestival.
We don’t have a lot of local products: lingonberries, blueberries, cloudberries, and actually venison and everything was on the surface, you just had to take it and add it. We experimented in which fraction how much, how it turned out well in the end, because our drink, as a gastronomic souvenir, took first place in the all-Russian competition.
Sergey Serbin, arctic barista:
Further more. The partner's ideas came into play. And dried reindeer meat ended up not only in coffee, but also in ice cream.
The idea came about after my trip to Japan, where I tried fish ice cream and thought why not use our local product: venison - to combine the incompatible: sweet ice cream and meat, plus added salt and pepper right into the glaze.
Nina Fedotova, preparing desserts with venison:
The initial idea to mix meat and cream mass in Norilsk turned out to be unrealizable, the necessary equipment was not available at the existing production. The concept has been changed. And the glaze with venison was actually kneaded by hand. Now northerners are offered a few more ideas for meat desserts: with cloudberries, blueberries, blueberries and lingonberries, and another delicacy - Shakhterskoye ice cream.
It is black in color with the addition of food charcoal, salted caramel taste. As a tribute to the profession of a miner, which is popular in our city, my family also has miners in the male line.
Nina Fedotova, preparing desserts with venison:
Until the novelty is launched for general sale, there is no mass production. The certification process is being completed. Upon receipt of the coveted papers, the plans to conquer the market are grandiose: there is a demand for the author's products of Norilsk residents not only in Russian megacities, but even in China and the United Arab Emirates.
Gastronomic concepts have ideas for expansion: for example, ice cream with fish and reindeer moss. You look, the traditional stroganina, for example, from chir with muksun, will also go into the dessert course. In any case, for this New Year, you can taste the sophistication of the Far North only in Norilsk. So come fly.
