Kholodets is a hearty dish made from a thickened to a jelly-like mass from cooling meat broth with pieces of meat. Known since the 16th century. In Russian cuisine it is a popular cold appetizer on the festive table. Usually jellied meat is served with horseradish or mustard. There are national varieties of jellied meat, for example, the Georgian dish Muzhuzhy, the Moldavian jelly “Resol" from the rooster.
