Rosselkhozbank experts studied the sheep breeding market and identified the main trends in its development dynamics.
The volume of production of small ruminants in 2021 amounted to 213 thousand tons in carcass weight. This is mainly mutton, the production of goat meat is insignificant. Mutton consumption is roughly equal to production. About 77 kg of meat per capita is consumed annually in the country. Of these, 31 kg are for chicken, 28 for pork, 13 for beef, 3 for turkey. About 0.5 kg more is accounted for by other types of meat (for example, duck, rabbits). Lamb is consumed about 1.5 kilograms (2% of the meat market).
Due to the peculiarities of fattening in this segment of the meat market, the share of small farms is the highest, which together account for more than 90% of production. Geographically, production is concentrated in the North Caucasus and the Volga region, due to the relatively mild climate and the availability of grazing land. The centers of consumption are the regions of the North Caucasus, the Volga region and the South of the country, as well as large urban agglomerations.
Meat consumption in Russia is at a record level. Its main types - chicken, pork, beef - cease to be market drivers. In the coming years, consumption may increase due to the diversification of the meat consumer basket. Russians are buying more and more turkey, which has long been competing with chicken for a place in the refrigerators of healthy lifestyle adherents. Most likely, the consumption of duck, rabbit meat and other types of meat that are less in demand now will grow. The Center for Industry Expertise of the Russian Agricultural Bank (TSOE) also predicts an increase in mutton consumption.
“In the future, lamb has every chance to compete with turkey for fourth place in the meat market. We see positive trends in production - the opening of new enterprises for the slaughter and processing of lamb and the contracting of farmers to ensure the volume of these enterprises. The share of specialized meat breeds of animals is growing. This means that more consumer-friendly products will appear on the market - small cuts in modern packaging. An increase in the share of meat breeds and the spread of uniform slaughter standards (age of animals) will most likely lead to the fact that the product will become leaner and lose its specific smell. This will largely be a new product, to which various statements can still be applied - "organic", "free grazing", "farming", "halal", "kosher" - to increase the added value," notes the head of the Center for Industry expertise of the RSHB Andrey Dalnov. Based on these positive developments, the CEOE predicts a rapid increase in mutton consumption by about two times, to 3 kg per capita by 2030.
